Honey Lemonade with Frozen Fruit Cubes
Posh lemonade with fruity bits. Great for kids parties or family gatherings where everyone is driving.

Makes approximately 4.5 pints

6 lemons
6oz honey
4.5 pints water
Small pieces of assorted fruit

Wash the lemons and remove the zest only, with a potato peeler or small sharp knife, put to one side.

Squeeze the lemons and strain the juice to remove the pips.
Combine the lemon juice and honey in a large jug, stirring well. Then stir in the water.

Place 1 or 2 pieces of fruit into each compartment of 2 ice cube trays. Top up each compartment with the honey lemonade and freeze until firm.

Add the lemon zest to the remaining lemonade and chill in the fridge.

To serve, divide frozen fruit cubes between tall glasses and fill with the remaining lemonade.

Adults and children both love this drink but have different taste buds. Children may like less lemon juice or more honey. Adjust accordingly.
