Baked Brie With Apricot, Honey & Almonds
I absolutely love Brie cheese (I "discovered" cheese when I was in France) and when I came across this recipe I knew it would tickle my taste buds.

So here's what you need:

1 wheel of good quality brie

1 sheet of puff pastry

1 handful of preserved apricot

cup toasted, slivered almonds

2 tablespoons honey

1 beaten egg for egg-wash

With all the ingredients ready, here's what you need to do:

Pre-heat your oven to 180 degrees.

Place the brie on a clean working surface. Unfold the puff pastry and if using frozen pastry, make sure it is thawed before working with it.

Place the apricot pieces on top of the brie wheel.

Put of the slivered almonds on top of the apricots.

Carefully fold the puff pastry over the cheese tucking the excess underneath the cheese.

Brush the surface with an egg wash, and put in the oven until the top becomes golden brown, approximately 12-15 minutes.

Remove from the oven, let rest for five minutes and place on a serving dish.

Put the remaining toasted almonds on top, and then drizzle with honey.

Serve with crackers and enjoy!
